The rise in demand for gluten free snacks has risen mainly due to increased awareness of consumers. But do you actually need gluten free snacks? In this article we explore the basics of gluten free food.

Gluten: What is it?

As per Celiac Disease Foundation, “Gluten is a general name for the proteins found in wheat (wheatberries, durum, emmer, semolina, spelt, farina, farro, graham, KAMUT® khorasan wheat and einkorn), rye, barley and triticale – a cross between wheat and rye.” Wheat is the most commonly used ingredient in Indian diet. It is gluten in flour which gives it sticky consistency when it is mixed with water. It is responsible for making the dough elastic and giving it the ability to stretch and rise when cooked. 

It is easily found in any of the items which uses wheat as its ingredient: Bread, Pasta, Cakes, Cookies, Beer etc.

What is Gluten Intolerance? 

Gluten intolerance is a condition when body is unable to tolerate and process gluten. Many health conditions can not tolerate gluten and reject it. The most severe form is celiac disease which is an autoimmune disorder. The body automatically rejects gluten and the immune system attacks the gluten and gut lining too. 

It can also lead to several other complications like a digestive issue, diarrhoea, headache, constipation, lethargy, depression and skin rashes, etc. Some celiac disease symptoms are not primarily related to the digestive problem, so it becomes difficult to diagnose them. 

There are cases when some might not be affected by the celiac disease but are still gluten intolerant which is known as non-celiac gluten sensitivity. 

The rise of gluten free food

Gliadin and Glutenin are the two primary protein in gluten which causes the most harm to the body if you are a Gluten Intolerant person. Otherwise, it is relatively safe for consumption. So a food free of these components are called gluten free food.

The awareness of staying fit and healthy is widely spread. People have become more concerned over health and hence are more aware about their food.

This shift is not without reason, its because of the change in our lives which is getting more stressful with tight schedules. And so to keep the balance, we need to stay healthy and away from ailments that come from poor lifestyle choices and habits. 

The reason behind this change is our bad routine which is a concern for all of us.  People have become more careful of the food choices they make. They are also more aware about the constituents and nutritional value of what that they consume.
